Hilary's Gluten-Free Monster Cupcakes



In my opinion, most premade gluten-free cake mixes are not very good.  
It can end up crumbly or dry,
so I tweaked the recipe a little.
I love how they look kind
of like Oscar the Grouch. You could make red or blue ones and have a Sesame Street-themed party!






For the cup cakes...

1 Box of gluten-free cake mix

3/4 cup Vanilla or plain greek yogurt

4 Tbsp vegetable oil


For the icing...

125g Unsalted and softened butter

200g Icing sugar, sifted

1 tbsp Milk

Green food colouring

For the decoration...

Sugar Eyeballs     



1. Make the cake mix following the package directions. Then add in the eggs, Greek yogurt and vegetable oil and blend.

2. Put your cup cake cases into your baking tray and pour the mixture into the cup cake cases.

3. Place in the oven as per instructions.

4. Once baked cool your cupcakes completely before decorating.


For the icing...

  1. Put the butter into a bowl and beat with an electric hand mixer until light and fluffy.
  2. Sift in the icing sugar, then work it into the butter.
  3. Add the milk and then beat until creamy and smooth.
  4. Add your food colouring and distribute evenly.


I used a ribbon tip and simply started piping little stacks of frosting around the outer ring of cupcake and worked my way in.  Then I stuck the eyeballs on. The whole frosting part only took about 25 minutes total.
